CHEESE
On Prince Edward Island, we don't hurry Mother Nature. You might say we look at life differently here on the Island. While the rest of the world is hurrying products to market, we take our own sweet time - like we've done for over a century. ADL uses pure, sweet milk from the finest dairy cows, traditional craftsmanship and a time-honoured, natural aging process to create cheddar and specialty cheeses with unique and wholesome taste.

Mild Cheddar
Coloured or White

Cheddar is the best-known variety of cheese and it's the cornerstone of our ADL family of cheeses. ADL Mild Cheddar is carefully aged for about 3 months, and has a subtle milky flavour and slightly springy texture. Kids love it and it's perfect on a slice of apple pie. Leave it at room temperature for at least 30 minutes before serving to enjoy the full cheddar flavour.

Mild Light Cheddar
Cheddar is the best-known variety of cheese and it's the cornerstone of our ADL family of cheeses. ADL Mild Light Cheddar has 40% less fat than our regular Mild Cheddar, so it's a great alternative for cutting down on fat without compromising flavour and nutrition. Carefully aged for about 3 months, its mild milky flavour and slightly springy texture make it a popular choice. Leave it at room temperature for at least 30 minutes before serving to enjoy the full cheddar flavour.

Medium Cheddar
Coloured or White
Cheddar is the best-known variety of cheese and it's the cornerstone of our ADL family of cheeses. ADL Medium cheese is carefully aged for about 5 months and has a firm texture, nutty undertones and a subtle sharpness. Great in a sandwich or salad, it's usually the most popular choice on a cheese tray. Leave it at room temperature for at least 30 minutes before serving to enjoy the full cheddar flavour.

Old Cheddar
Coloured or White
Cheddar is the best-known variety of cheese and it's the cornerstone of our ADL family of cheeses. ADL Old Cheddar is carefully aged for about 10 months, and its strong, nutty flavour will tempt the most discriminating palate. With a firm texture that is sometimes slightly crumbly, ADL Old Cheddar is the perfect addition to sauces and au gratin dishes. Leave it at room temperature for at least 30 minutes before serving to enjoy the full cheddar flavour.

Extra-Old Cheddar

ADL Extra-Old Cheddar is carefully aged for about 18 months, and its strong, nutty flavour will tempt the most discriminating palate. With a firm texture that is sometimes slightly crumbly, ADL Extra-Old Cheddar is the perfect addition to sauces and au gratin dishes. Leave it at room temperature for at least 30 minutes before serving to enjoy the full cheddar flavour.

2-Year-Old White Cheddar
Cheddar is the best-known variety of cheese and it's the cornerstone of our ADL family of cheeses. ADL 2-Year-Old White Cheddar is carefully aged for two years, and its robust flavour makes it a natural choice for the "old cheese" enthusiast. Its delicious sharpness harmonizes beautifully with everything from finger foods to elegant entrees. Leave it at room temperature for at least 30 minutes before serving to enjoy the full cheddar flavour.

Marble Cheddar
Cheddar is the best-known variety of cheese and it's the cornerstone of our ADL family of cheeses. ADL Marble Cheddar is carefully aged for about 3 months and has a mild milky flavour and slightly springy texture. The combination of coloured and uncoloured cheddar creates the "marble effect," which is an attractive addition to any cheese tray. Leave it at room temperature for at least 30 minutes before serving to really enjoy the full cheddar flavour.

Colby Cheese
Colby is a milder cousin of Cheddar and it's one of our most versatile cheeses. Colby is carefully aged for 2 months, and its soft texture and mellow personality is similar to that of ADL Brick. ADL Colby's versatility makes it a great choice for snacks, cooking or entertaining.

Monterey Jack
Coloured or White
Monterey Jack is an excellent all-purpose favourite. Carefully aged for about 2 months, it has a firm texture and a mild nutty flavour. Monterey Jack is popular on a cheese tray or a sandwich, and you can melt it over your favourite casserole or chili.

Farmers Cheese
A North American original, Farmers is allowed to mature for about 2 months. Farmers' firm texture and fresh dairy flavour make it a great cheese for sandwiches and snacking. Perfect in lasagna, dips and desserts, Farmers mixes well with peaches and tomatoes, white wines and ice cold milk.

Brick Cheese
Brick probably got its name from the days when cheese makers used bricks to weight their cheese presses. Brick is allowed to mature for about 2 months. Its soft texture and mildly milky flavour has a hint of butter, and Brick is often used in cheese trays. Like Colby, ADL Brick has enough character to stand alone as a finger food or with other foods in a favourite recipe.

Mozzarella Cheese
Mozzarella is known throughout the world as the "pizza cheese", and it is one of our most popular cheeses. Carefully aged for about 2 months, it's perfect for pizza and lasagna, although ADL Mozzarella's mild buttery flavour has enough character for a cheese tray too.

Shredded Cheese
ADL has taken some of the work out of meal preparation! For your convenience, we offer some of our most popular cheeses in block and shredded varieties. Our Shredded Mozzarella, Mild, Medium, Marble and Cheddar Blend cheeses will save you time!

Havarti Cheese
Only Available on P.E.I.
Havarti is mild enough for children, but has enough character to satisfy the most discriminating adult tastes. Aged for about 2 months, Havarti has a supple, porous texture and a mild milky flavour - perfect for cheese trays, sandwiches and salads!
